Zuchinni Nut Loaf

INGREDIENTS
  • 1 1/2 cups all purpose flour
  • 1 tsp. cinnamon
  • 1/2 tsp. soda
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/4 tsp. baking powder
  • 1 cup sugar
  • 1 egg
  • 1 cup shredded zuchinni
  • 1/4 cup oil
  • 1/2 cup pecans
DIRECTIONS
  1. In a bowl, beat zuchinni, sugar and eggs.
  2. Add oil and mix well.
  3. Pour this over the other ingredients and blend well. Gently fold in the nuts.
  4. Turn into greased loaf pans.
  5. Bake at 325F for 35-50 minutes
