Zucchini Boats
  • Cooking Time: 15-25 minutes
  • Servings: 4
  • Preparation Time: 5 minutes
  • 1 lb. ground turkey or sausage
  • 3/4 cup of bread crumbs
  • 2 medium to large zucchini, slice long ways and hollowed out. Save the inner "meat" of the zucchini
  • 1-2 egg whites
  • 3/4 cup shredded cheese of choice (swiss and colby jack work well)
  1. Mix all ingredients in a bowl
  2. Dish the mix into the hollowed out zucchini shells
  3. Bake at 350 until soft
  4. Add diced tomatoes and more cheese partway through cooking if desired
  5. Allow to cool and enjoy
