Zucchini/Pumpkin Nut Bread
  • 1 ½ cups cups sugar
  • 3 eggs
  • 1 cup cooking oil
  • 2 cups shredded zucchini or pumpkin
  • 3 tsp vanilla
  • 1 tsp baking soda
  • 3 cups flour(sifted)
  • 1 ½ tsp cinnamon
  • 1 cup chopped nuts (optional)
  • For Pumpkin Bread substitute ½ cup each oil and buttermilk
  • And only 2 tsp vanilla rather than 3
  1. Sift flour, baking soda & cinnamon in large bowl. Add remaining dry ingredients. Mix by hand with wooden spoon till ingredients till all ingredients are blended. Beat eggs in separate bowl add other wet ingredients including shredded zucchini. Combine wet and dry and mix gently with wooden spoon(Do not beat with hand mixer)
  2. Pour into 2 – 9x 5 loaf pans which have been greased and floured (For glass loaf pans heat is lower at 325o)
  3. Bake in preheated oven at 350o for 55-60 minutes. Test for doneness by inserting toothpick or cake tester, till it comes out clean.
