Willie's Sausage Gravy and Biscuits
  • 1 lb breakfast sausage
  • 1/3 c flour
  • 3-4 c milk
  • 1/2 tsp salt (more to taste)
  • 1 tsp ground black pepper (more to taste)
  1. Brown sausage over medium heat. Drain, if necessary
  2. Stir flour, salt, and pepper into sausage and cook until all the flour has incorporated into the sausage and appears almost translucent, stirring frequently. Should take about 5 minutes.
  3. Add 3 c of the milk and heat until gravy starts bubbling, stirring frequently (be sure to also scrape bottom of pan to ensure gravy at the bottom doesn't burn). Reduce heat to medium low. This is a good time to taste the gravy and add salt and pepper as needed.
  4. Once heat is reduced, continue stirring frequently, and the gravy will start to thicken after a few minutes. If the gravy is too thick, add milk, 1/4 to 1/2 c at a time, until gravy reaches desired consistency. Serve over favorite biscuits.
