Veggie and cheese egg casserole

INGREDIENTS
  • 1 c. buttermilk
  • 1/2 c. onion, grated
  • 1-1/2 c. shredded Monterey Jack cheese
  • 1 c. cottage cheese
  • 1 c. spinach, chopped
  • 1 c. tomatoes, chopped
  • 1/2 c. butter, melted
  • 18 eggs, beaten
DIRECTIONS
  1. Mix all ingredients together; pour into a greased 13"x9" baking pan. Cover; refrigerate overnight. Bake at 350 degrees for 50 minutes to one hour. Serves 8 to 10
