Vanilla Muffins

  • 1 cup sugar
  • 1 beaten egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 cup low fat eggnog or fat free milk
  • 1/4 cup unsalted butter, melted
  • 1 1/2 tsp sugar
  • 1 teaspoon cinnamon
  1. Combine sugar and egg; beat well at medium speed using an electric mixer.
  2. Combine flour, baking powder, and slat. Add to sugar mixture alternately add to sugar mixture alternately beginning and ending with flour mixture, beating well after each addition. Stir in the butter and vanilla. Spoon into greased muffin cups of a muffin pan, filling two thirds full. Combine remaining sugar and cinnamon and sprinkle evenly over the muffins. bake at 350 F for 20 minutes. Remove muffins from the pan immediately. If desired, serve with a vanilla butter.
I love the smell and flavor of Vanilla extract, and I'm a big fan of muffins. When my favorite recipe got damage, I had to recreate it as my own but taking creative steps. And every time I smell vanilla, I think, I must be home! When i return home each week, I feel welcomed by the scent.
