Turkey cutlets Parmesan

  • Servings: 45 people
  • Turkey Cutlets- 24 pieces
  • liquid eggs- 1 carton (has about 12 eggs in carton)
  • bread crumbs or breading- 9 cups (approx)
  • Grated Parmesan- 4 ½ cups
  • Grill oil- as needed
  • Black pepper- 1¾ tsp
  • Dry Parsley- 1 ¾ tbsp
  • minced garlic or garlic powered- ¾ tbsp
  • pizza sauce- 1 (#10 or 6lb) can
  • shredded mozzarella cheese or Parmesan cheese- 3lbs
DIRECTIONS
  1. 1. Wash hands
  2. 2. pour liquid eggs in a bowl large enough to dip cutlets in
  3. 3. mix bread crumbs or breading and Parmesan cheese in large bowl or zip-lock bag
  4. 4.Dip cutlets into egg and then cover with crumbs/cheese mixture
  5. 5. layer in pan so you can fry later
  6. 6. use the grill/ stove, brown cutlets until light golden
  7. 7. cook turkey in oven 350º for 20 minutes
  8. 8. heat up the pizza sauce
  9. 9. put turkey on plate, put scoop of sauce on top then sprinkle Mozzarella or Parmesan
