Tomato pie

INGREDIENTS
- 1 9" deep unbaken pie crust
- 1 tbs sharp mustard (Dyon)
- 5 ripe tomatoes peeled and sliced
- 2 c pecorino cheese shredded
- 1/2 c fresh basil leaves
- 1 ts dried oregano or 1 tbs fresh
- 2 tbs parsley chopped
- 3 spring onions thinly sliced
- 2 tbs olive oil
- 6 drops of tabasco
- 2 eggs beaten
- 1 c whole milk
- 1 clove garlic pressed
- 1 ts cayenne pepper
DIRECTIONS
- 6 drops of tabasco
- 2 eggs beaten
- 1 c whole milk
- Brush pie crust with mustard, fill crust with tomatoes, mix 1/2 c cheese with pepper and sprinkle on tomatoes,top with basil oregano,parsley and unions, sprinkle with olive oil tabasco mix.
- Mix beaten eggs, milk, garlic, cayenne pepper, and rest of pecorino, top with egg mixture.
- Preheat oven to 375 F (190 C) and bake pie 45-60 min till golden brown.
- Serve warm or cold
