Three Bean Chili
  • Cooking Time: 30 minutes
  • Servings: 12 (1 cup) servings
  • Preparation Time: 25 minutes
  • 1 lb ground turkey
  • 1 large onion, chopped
  • 1/2 pound fresh mushrooms (I'm not to fussy about how many mushrooms I use - I stop chopping when I think I've got enough for my taste)
  • 1 grated carrot
  • 1/2 red pepper, chopped
  • 1 14 oz. can kidney beans
  • 1 14 oz. can black beans (if you can only find 19 oz. that is fine too)
  • 1 14 oz. can romano or pinto beans
  • 1 10 oz. can tomato soup
  • 1 28 oz. can diced tomatoes
  • 1 14 oz can corn niblets
  • 1 8 oz. can tomato paste
  • 2 tablespoons chili powder (if you can handle it, try chipoltle chili powder)
  • salt and pepper to taste
  1. Fry onion and ground turkey in a large pot. When browned nicely, add in the rest of ingredients and simmer about 30 minutes.
  2. Serve with a dollop of sour cream and a sprinkling of cheese if you like - but remember to add to your WW pts total!
I really don't remember where the original recipe came from I got it so long ago. I don't even remember exactly how the original recipe went. I've added my own ingredients to it and my whole family loves it! For Weight Watcher's you can get about 12 (1 cup) servings from this recipe which according to MasterCook equals : 228 calories 5 grams fat 8 grams fiber WW pts - 3.5 (If you cap off your fiber pts to 4, than the points value is 4.5)
