Thousand island dressing
  • 2 large egg yolks
  • 1 T. white wine vinegar
  • ¼ t. mustard flour
  • 1 ¼ C. olive oil
  • ¼ C. catsup
  • 2 T. sweet pickle relish
  1. Blend egg yolks, vinegar and mustard together until smooth. With the blender running and add a couple drops of oil, blend until smooth.
  2. Continue in this manner until about a quarter cup of the oil has been incorporated, then add the oil in a thin stream blending all the while.
  3. Add the catsup and blend until smooth. Mix relish into dressing by hand.
  4. Store in a glass container, makes about 1 ½ cups.
