Thai Crab Meat Salad
INGREDIENTS
- 1 head iceberg lettuce
- 1 head red leaf lettuce
- 1 head romaine lettuce
- 8 oz. mesclun mix
- 1 lb. Crab Claw Meat
- 6 oz. of lime juice (fresh)
- 3 oz. fish sauce (nampla)
- 2 Serrano peppers, chopped
- 2 Tbs. cilantro, chopped
- 1/2 red pepper, chopped
- 3 cloves fresh garlic, chopped
- 3 Tbsp. sugar
- carrot curls, for garnish
DIRECTIONS
- Combine iceberg lettuce, red leaf lettuce, romaine lettuce, and mesclun mix.
- Place mixture onto plate.
- Combine lime juice, fish sauce, Serrano pepper, cilantro, red pepper, chopped garlic, and sugar. Mix until sugar dissolves.
- Add claw meat into the mix and drain.
- Place over green salad and garnish with carrots.
