Thai Crab Meat Salad

INGREDIENTS
  • 1 head iceberg lettuce
  • 1 head red leaf lettuce
  • 1 head romaine lettuce
  • 8 oz. mesclun mix
  • 1 lb. Crab Claw Meat
  • 6 oz. of lime juice (fresh)
  • 3 oz. fish sauce (nampla)
  • 2 Serrano peppers, chopped
  • 2 Tbs. cilantro, chopped
  • 1/2 red pepper, chopped
  • 3 cloves fresh garlic, chopped
  • 3 Tbsp. sugar
  • carrot curls, for garnish
DIRECTIONS
  1. Combine iceberg lettuce, red leaf lettuce, romaine lettuce, and mesclun mix.
  2. Place mixture onto plate.
  3. Combine lime juice, fish sauce, Serrano pepper, cilantro, red pepper, chopped garlic, and sugar. Mix until sugar dissolves.
  4. Add claw meat into the mix and drain.
  5. Place over green salad and garnish with carrots.
