Taco Soup
INGREDIENTS

  • Preparation Time: 45 minutes
  • 2 Lbs. Ground beef
  • 2 C. Onions (opt.)
  • 2 cans pinto beans
  • 1 can pink kidney beans
  • 1 can corn
  • 1 can mexican style stewed tomatoes
  • 1 can diced tomatoes
  • 1 can diced tomatoes with chilies
  • 2 cans diced green chilies
  • 1 can black olives
  • 1 pkg. Taco seasoning mix
  • GARNISH:
  • corn chips
  • Sour cream
  • Grated cheese
  • Chopped green onions
DIRECTIONS
  1. Cut up onion
  2. Brown hamburger and onion
  3. Add Taco seasoning
  4. In another pot mix pinto beans, kidney beans, corn, tomatoes, and chilies bring to a simmer
  5. Cut up olives
  6. Add the olives and hamburger to simmering bean mixture
  7. Serve warm and garnish with corn chips, sour cream, cheese, and green onions
