Sweet Potato and Smoked Chile Soup
  • 1 oz butter
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 quart chicken stock
  • 3 medium sweet potatoes, peeled and chopped
  • 1/2 cup honey
  • 1/2 cup heavy cream
  • 1 tablespoon pureed chipolte peppers
  • Salt and pepper to taste
  1. Directions: In a large saucepan cook onions and garlic in butter until translucent, about four minutes. Add stock and potatoes, and simmer until tender, about 45 minutes. Add honey, cream, and peppers, removed from heat and puree until smooth. Serve with a dollop of honey and cream.
