Sweet Potato Casserole
  • 4 cups sweet potatoes, cooked and mashed
  • 8oz cream cheese, softened
  • 1/2 cup butter, softened
  • 2 eggs, beaten
  • 1/4 cup brown sugar
  • 2 1/2 Tbsp. dry sherry
  • 1/4 tsp salt
  • 3/4 cup chopped walnuts
  • 1/2 tsp nutmeg
  1. preheat oven to 350 degrees. With electric mixer (NOT food processor), whip all ingredients, except walnuts, nutmeg, until light. Stir in walnuts and put in buttered casserole. Spread evenly and sprinkle with nutmeg over the top. Bake 45 minutes util golden.
Fill minature pumpkins with this mixture and you'll be the hit at Thanksgiving dinner.
