Sweet Persimmon Side

INGREDIENTS
- Cooking Time: 25 minutes

- Preparation Time: 5 minutes
- 3 Persimmons
- 3 Tomatoes
- 1 Med. White Onion
- 2 ¼ tsp Brown Sugar
- 2 ¼ tsp Salt
- 1 TBS Olive Oil
- 1/8 tsp of Nutmeg
- Pepper to taste (this will even out the sweetness)
DIRECTIONS
- 1. Chop Persimmons, tomatoes, and onion in thin long think strips
- 2. Hit a large frying pan with Olive Oil
- 3. Add Persimmons and onions, cook until slightly soft
- 4. Add tomatoes and add all spices. Mix and cover until tomatoes are soft
- Serve Hot
RECIPE BACKSTORY
A co-worker of mine brought in a huge bag of persimmons. Thinking way back in the past how I would be forced to try them at my ex boyfriends house and hated every stinking bite. I thought about it for awhile and said to myself, I am a new woman with very different taste buds now; I want to give them a try.
So to make a long story short, I freaking love them! I made up a recipe and it turned out so good. I don’t think it is for everyone but Mike and I enjoyed it. Not that we have sophisticated palettes or anything but I think this would be a wonderful Thanksgiving side dish or severed with some sort of meat dish like turkey, Cornish hen, or even duck – YUM! This is a sweet dish so keep that in mind. Who knew cooking with fruit would be so yummy!
