Super White Cupcakes

- 3 cups sifted cake flour
- 1 tablespoon baking powder
- 1/2 cup butter or margarine, softened
- 1 1/2 cups granulated sugar
- 3/4 cup milk
- 1/2 teaspoon Pure Vanilla Extract
- 5 egg whites
DIRECTIONS
- Preheat oven to 350.
- In bowl, sift flour and baking powder.
- In another bowl, cream butter and sugar with mixer until light and fluffy.
- Add flour mixture alternately with milk; mix well. Add vanilla.
- In separate bowl, beat egg whites until stiff but not dry; fold into batter.
- Pour into prepared pan.
- Bake 20-25 minutes. Cool 10 minutes in pan on wire rack; remove and cool completely before decorating.
