Super White Cupcakes
  • 3 cups sifted cake flour
  • 1 tablespoon baking powder
  • 1/2 cup butter or margarine, softened
  • 1 1/2 cups granulated sugar
  • 3/4 cup milk
  • 1/2 teaspoon Pure Vanilla Extract
  • 5 egg whites
  1. Preheat oven to 350.
  2. In bowl, sift flour and baking powder.
  3. In another bowl, cream butter and sugar with mixer until light and fluffy.
  4. Add flour mixture alternately with milk; mix well. Add vanilla.
  5. In separate bowl, beat egg whites until stiff but not dry; fold into batter.
  6. Pour into prepared pan.
  7. Bake 20-25 minutes. Cool 10 minutes in pan on wire rack; remove and cool completely before decorating.
I found this recipe in my memaw's personal recipe book. She used to make these for showers and teas because they are really white and look elegant :)
