Sunny's Carrot Salad
INGREDIENTS
- ½ cup of raisins
- 1 pound (5-6 medium) peeled carrots
- ½ cup of mayo OR ½ c of yogurt (OR a combination of them both)
- 2 T of lemon or orange juice
- Salt & pepper to taste
DIRECTIONS
- Pour boiling water on raisins.
- Coarsely grate peeled carrots.
- Set aside.
- In a small bowl mix together mayo or yogurt or a combination of the two.
- Drain the raisins and combine with the mayo mixture.
- Add lemon or orange juice to thin out the dressing.
- Combine with the dressing.
- Salt & pepper to taste.
