Sunny's Carrot Salad
  • ½ cup of raisins
  • 1 pound (5-6 medium) peeled carrots
  • ½ cup of mayo OR ½ c of yogurt (OR a combination of them both)
  • 2 T of lemon or orange juice
  • Salt & pepper to taste
  1. Pour boiling water on raisins.
  2. Coarsely grate peeled carrots.
  3. Set aside.
  4. In a small bowl mix together mayo or yogurt or a combination of the two.
  5. Drain the raisins and combine with the mayo mixture.
  6. Add lemon or orange juice to thin out the dressing.
  7. Combine with the dressing.
  8. Salt & pepper to taste.
