Summer Squash Casserole
  • 2 cups cooked summer squash or zucchini
  • 1/2 cup mayonnaise
  • 1/2 cup chopped onion
  • 1 egg, beaten
  • 1 tsp. sugar
  • 1 cup grated Cheddar cheese
  • 1/2 stick margerine
  • Salt, pepper to taste
  • Bread crumbs (about 1/2 cup)
  1. Cook and drain squash. (It is not necessary to peel it) When soft, drain the squash and mash it. Add mayonnaise, onion, egg, sugar, and salt and pepper to taste.Place in greased small casserole dish. Sprinkle with cheese, then bread crumbs. Dot with margerine. Bake uncovered 30 minutes at 350 degrees. Makes 4 servings.
