Sugar & Spice Cupcakes

- 1/3 cup butter, melted
- 1/2 cup buttermilk
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 cup flour
- 2/3 cup sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- pinch of grated nutmeg
- pinch of ground cloves
- Cinnamon Butter Icing
DIRECTIONS
- Preheat oven to 350 degrees.
- In a large bowl, whisk together butter, buttermilk, egg, and vanilla until smooth.
- Sift together flour, sugar, cinnamon, baking powder, baking soda, salt, nutmeg, and cloves. Whisk into buttermilk mixture until smooth.
- Divide batter evenly among 12 paper-lined muffin cups 2.5 or 3 inches in diameter. Bake 18 to 20 minutes, or until a cake tester inserted in a cupcake comes out clean. Let cool in pans 5 minutes, then remove to a wire rack right side up to cool completely. Spread tops of cupcakes with Cinnamon Butter Icing.
