Stuffed Cremini Mushrooms

INGREDIENTS
- 2 cups cremini mushrooms with stems removed and diced
- 4 garlic cloves minced
- small bunch of parsley chopped
- 4 TBSP of olive oil
- 1 cup fresh parmesan cheese
- 5 TBSP of whole wheat bread crumbs
- salt to taste
DIRECTIONS
- First make filling.
- In pan saute diced mushroom stems, garlic and parsley with half oil.
- Add cheese and bread crumbs to pan and mix.
- In pan with medium heat add half oil and cook mushrooms facing down for 3 minutes.
- Turn over side up and fill mushrooms with filling, lower the heat and cook for 3 to 5 more minutes.
- Add salt to taste.
