Strawberry Vinaigrette
INGREDIENTS
  • 1 cup sugar-free strawberry preserves (see Options)
  • 1/4 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 1/2 teaspoon ground pepper
  • 1/2 cup olive oil
  • 1/2 cup water
DIRECTIONS
  1. In a medium bowl, whisk together the preserves, vinegar, mustard, and pepper until thoroughly combined.
  2. Gradually whisk in the olive oil then the water. Serve immediately, or keep chilled until ready to serve.
RECIPE BACKSTORY
OPTIONS: You can use a different flavor preserves, if you prefer. This is terrific over any tossed salad.
