Spiralized zucchini with shrimp
INGREDIENTS

  • Preparation Time: 20 minutes
  • 2 zucchinis
  • 1/2 pound shrimp
  • 3 cloves garlic
  • 1/8 cup pistachios
  • 1 small avocado
  • 1 teaspoon lemon juice
  • 1/8 cup pine nuts
  • 1/4 teaspoon pepper
  • Salt to taste
DIRECTIONS
  1. Cut off the ends of the zucchini and spiralize. Set aside in a large bowl.
  2. Dice 2 of the 3 garlic cloves and de-tail the shrimp.
  3. Heat olive oil in a small skillet over medium heat. Add the garlic and shrimp and heat until the shrimp is cooked (or warm if using pre-cooked shrimp). Remove from heat.
  4. While the shrimp cools, dice the remaining 1 garlic clove, crush the pistachios into small pieces, and slice the avocado into chunks.
  5. Add the shrimp mixture, lemon juice, nuts, extra garlic, and avocado pieces to the bowl with the zucchini. Season with salt and pepper and serve immediately.
