Spinach and Kale Salad with Asian Pear

  • 2 cups kale
  • 1/2 teaspoon olive oil
  • Pinch of salt
  • 1 Asian pear
  • 1/4 red onion
  • 2 Tablespoons gorgonzola cheese
  • 4 cups spinach or leafy greens
  • 2 Tablespoons crushed walnuts
  • 2 Tablespoons pine nuts
  • Dressing:
  • 2 Tablespoons olive oil
  • 1 Tablespoon balsamic vinegar
  • 2 teaspoons honey
  • Salt to taste
  • Pepper to taste
  • 1 clove garlic
  1. Tear the kale into bite-sized pieces and place into a small bowl. Add the 1/2 teaspoon olive oil and pinch of salt. Gently massage the kale with the oil and salt until it feels tender.
  2. Cut the Asian pear into bite-sized pieces, slice the onion into small strips, and shred the cheese into large flakes. Combine in a large bowl along with the greens and nuts.
  3. In another small bowl, mix the olive oil, balsamic vinegar, honey, salt, and pepper. Mince the garlic and add to the small sauce bowl as well.
  4. Pour the dressing over the salad and serve.
