Spinach Stuffed Chicken Breasts

  • 1/2 C mayonaise
  • One 10 oz pang of frozen, chopped spinach, thawed and drained
  • (Or use fresh)
  • 1/2 C crumbled feta cheese
  • 2 cloves garlic
  • 4 skinless, boneless chicken breasts
  • 4 slices bacon
  1. In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.
  2. Carefully butterfly chicken breasts, making sure not to cut all the way through.
  3. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon and secure with a toothpick.
  4. Place in shallow baking dish and cover.
  5. Bake for 40 min, or until chicken is no longer pink and the juices run clear. An instant read thermometer inserted into the center should read at least 165 degrees.
This recipe is from Allrecipes submitted by Laurie Wheeler. I loved it when I made it. I used smaller breasts and fresh spinach. Came out great!
