Spinach Feta Spiral Turkey Meatloaf
  • 20 oz. ground turkey
  • 1 egg
  • 1/2 c. dry plain breadcrumbs
  • 1/2 c. red wine
  • 1 onion, finely chopped
  • 1 tsp. Italian seasonings
  • Pepper, to taste
  • 20 oz. chopped frozen spinach, thawed and well drained
  • 1/4 lb. Feta cheese
  • 1 medium tomato, chopped and pulp removed
  • Tomato sauce, spaghetti sauce or pasta sauce
  1. Mix turkey, egg, breadcrumbs, red wine, onion and seasonings. Pat flat into a wax paper lined baking sheet. Meat mixture will not fill pan, do not pat too thin. Sprinkle with spinach, Feta and tomato but do not spread topping too far into short ends of meat. Hold onto one short end of wax paper and use paper to help roll meat into a spiral roll. You might have to reseal meat mixture if it breaks apart. Once rolled, light squeeze to adhere. Use wax paper to help transfer loaf into a 13" x 9" pan sprayed well with Pam (or line pan with foil and spray well with Pam). Cut wax paper near loaf. Carefully slide wax paper out from under loaf and discard. Spoon some of the tomato sauce over loaf. Bake at 350 degrees for about one hour. Spoon additional sauce over loaf one or two times more. Let stand 10 minutes before slicing. Heat remaining sauce and serve with slices.
