Spicy Shrimp Tacos with Mango Salsa
  • For the salsa:
  • 1 ripe but firm mango (peeled, pitted &diced)
  • 1 small red onion (peel and dice)
  • 1 jalapeƱo seeded and diced (optional)
  • 1/2 red pepper (diced)
  • (1/4 cup) fresh cilantro (chop finely)
  • the juice of a lime
  • salt and pepper to your taste
  • For the shrimp:
  • 1/2 tablespoon olive oil
  • (1 lb) shrimp peeled, deveined and tails removed
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • salt (to your taste)
  • For the cilantro lime sauce:
  • 115 grams (1/2 cup) Greek yogurt 2% fat you can use sour cream
  • (1/4 cup) fresh cilantro chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon minced garlic
  • You'll also need:
  • 8 small corn tortilla
  • (1 cup) shredded red cabbage

  1. To prepare the mango salsa: Combine all the ingredients in a bowl, cover and place in the
  2. fridge.
  3. Cook shrimp: heat the olive oil in a large skillet over medium high heat. Season both sides of shrimp with chili powder, paprika, cayenne pepper, and salt. Add the shrimp to pan and
  4. sautee for 5-6 minutes, flipping occasionally, until the shrimp are pink and cooked throughly.
  5. To prepare the cilantro lime sauce: blend all ingredients in a food processor until the desired
  6. consistency is reached. Add water if necessary.
  7. Assemble the tacos: warm the tortillas. (if desired) Spread a spoonful of cilantro lime sauce on the tortilla, add a
  8. handful of shredded red cabbage and place shrimp on top of the cabbage.Top with the mango
  9. salsa, drizzle more sauce over the entire thing and serve.
These shrimp tacos are extremely flavorful.
