Spaghetti pie

  • 6 oz spaghetti, cooked and drained
  • 2 tbsp olive oil or butter
  • 2 large eggs, well beaten
  • 3/4 c parmesan cheese
  • 1 c ricotta cheese
  • 1 c spaghetti sauce
  • 1/2 c shredded mozzarella cheese
DIRECTIONS
  1. Preheat oven to 350; lightly grease a 10" pie plate.
  2. Toss hot spaghetti with olive oil or butter.
  3. Combine eggs and 1/2 c parmesan.
  4. Stir into spaghetti and pour into pie plate.
  5. Form into a crust.
  6. Spread ricotta cheese over spaghetti crust.
  7. Top with spaghetti sauce.
  8. You may also add mushrooms, hamburger, or sausage.
  9. Bake uncovered 25 minutes.
  10. Top with mozzarella cheese.
  11. Bake 5 minutes more or until cheese melts.
  12. Remove from oven.
  13. Sprinkle with 1/4 c parmesan.
  14. Cool 10 minutes before cutting into wedges.
RECIPE BACKSTORY
I use 2 c spaghetti sauce and 1 c mozzarella cheese.
