Southern Cornbread Dressing

  • 1-1/2 cups yellow corn meal mix
  • 1 tsp salt
  • 1 egg 2/3 cup milk
  • 1/2 cup vegetable oil
  • ingredients
  • 1 whole chicken
  • 4 stalks celery
  • 8 boiled eggs
  • 2 cups each diced onions, green pepper
  • 1 bundle green onions
  • 1 tsp poultry seasoning
  • 1/2 tsp ground sage
  • salt and pepper to taste
DIRECTIONS
  1. preheat oven to 400
  2. in a mixing bowl combine cornmeal, salt, egg and milk
  3. stir gently till combined
  4. heat vegetable oil in a iron skillet
  5. pour half of vegetable oil in corn mixture and stir gently until incorperated
  6. pour batter into heated oil and place in oven
  7. bake for 20-35- minutes
  8. remove when browned and let cool
  9. in a large stock pot add your chicken and cover it with water
  10. add ribs of celery, 1 sliced onion and salt and pepper to taste
  11. once chicken has boiled 35-40 minutes remove and let cool
  12. retain broth
  13. saute onions.pepper and green onion bottoms
  14. de bone chicken
  15. in a LARGE mixing container
  16. break up cornbread
  17. add in deboned chicken, sauteed vegetables,chopped green onion tops, salt pepper,poultry seasoning, and ground sage.
  18. mix coarsely,
  19. dice boiled eggs in mixture
  20. strain broth and add to coarse mixture until it is a consistency of a thick cake batter
  21. bake on 325 in oven for 1 hour
