Sour Cream Banana Bread, Best Ever!

  • 1/2 cup (1 stick butter) butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • 1 1/2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cup mashed RIPE bananas, about 3
  • 1/2 cup sour cream
  • 1 tsp. vanilla
  • 1 cup walnuts, chopped (optional)
  • 1 cup semi sweet chocolate chunks ( optional)
DIRECTIONS
  1. Preheat oven to 350 degrees. Grease and flour one 9-inch loaf pan (or 3 small ones). Pan should be 3/4 full of batter.
  2. In a large bowl, cream the butter with sugar until light and fluffy. Add the eggs and mix well.
  3. Whisk together the flour, baking soda, and salt; combine with the butter mixture.
  4. Add the sour cream, bananas, and vanilla; stir well.
  5. Pour into prepared pans and bake for 50-55 minutes.
  6. Cool for 10 minutes and then turn the loaf out onto a rack.
RECIPE BACKSTORY
This cooks a bit dark on the outside so only go by the center when you check it for doneness.. knife should come out not quite all the way clean, so as not to over cook.
