Sophia Loren's Pasta
INGREDIENTS
  • Servings: 4
  • 4 slices thick-cut smoky bacon, diced in 1-inch pieces
  • 1 large shallot, diced
  • 2/3 pound chicken tenders, cut into bite-sized pieces
  • 28-ounce can diced tomatoes, with basil, garlic and oregano
  • Salt and pepper
  • 2/3 box pasta of choice
  • Parmesan cheese
DIRECTIONS
  1. Put water on for pasta.
  2. Over medium heat, sauté bacon and shallots in 10-inch frying pan until bacon is softened but not browned, about 5 minutes.
  3. Add chicken and saute 5 minutes more. Add tomatoes, undrained, and bring to a boil. Reduce heat and cook 5 minutes, covered. Remove cover, stir and cook an additional 5 minutes. Salt and pepper to taste. Serve over cooked pasta and pass the Parmesan. Serves 4.

I found this recipe in the Pittsburgh Post-Gazette. Supposedly it originated with Sophia Loren. It's very easy and tasty.
