Single Life Salmon
INGREDIENTS
  • Cooking Time: 20-25 minutes
  • Servings: 1-2
  • Preparation Time: 5 minutes
  • Pacific salmon fillets
  • olive oil
  • butter
  • leeks
  • garlic
  • fresh parsley
  • vegetable stock
  • dill
DIRECTIONS
  1. Heat 2 tbs unsalted butter in a pan on med-low.
  2. Add 2 thinly sliced leeks + 1 minced garlic clove. Sautée for 5 minutes.
  3. Add 1 c vegetable stock and 1/4 c fresh parsley.
  4. Add salt and fresh-cracked pepper to taste. Simmer for 5 minutes.
  5. Purée in food processer with a handful of fresh dill.
  6. Add 2 tbs olive oil + 1 tbs butter in a pan on med.
  7. Put salmon fillets skin-side down. Cook for 8 minutes.
  8. Flip them over and cook for another 2-3 minutes, depending on how cooked you like your salmon.
  9. Plate and pour the leek sauce over top.
