Shrimp with Marinara Sauce
  • 2 lbs fresh or frozen shrimp
  • 1/2 cup olive oil
  • 1 clove minced garlic
  • 2 lbs plum tomatoes, mashed
  • 1 tbsp fresh minced basil (or dry basil)
  • pinch of oregano
  • 2 tbsp dry white wine
  • Salt and pepper to taste
  1. 1 - Shell and de-vein the fresh shrimp. Wash and drain well.
  2. 2 - In a medium-size saucepan, cook the garlic in 1/4 cup olive oil, over low flame, until light brown. Add the tomatoes, basil, oregano, wine, salt and pepper. Cover partially. Simmer for 30 minutes.
  3. 3 - In a large skillet, heat the remaining olive oil. Saute the shrimp for about 3 minutes. Discard the oil and add the shrimp to the sauce. Simmer for 3 minutes
