Seafood Quesadilla Pie
  • 1 10oz jar green salsa or enchilada sauce
  • 4 small flour tortillas
  • 1/2 lb shrimp, cooked
  • 1/2 lb crab meat, cooked
  • 2 1/2 cups Monterey Jack cheese, shredded and separated
  • Various Garnishes (salsa, avocado, lime wedges, etc.)
  1. Preheat oven to 400*F.
  2. Combine seafood. In a small, round dish, layer tortilla, salsa, seafood, cheese.
  3. Cover loosely with foil and bake for 20 minutes. Uncover and bake for another 10 minutes. Let set 5 minutes and cut into slices. Serve with garnishes of your choice.
