Scallop Stuffed Shells
INGREDIENTS

  • 1/4 cup cottage cheese
  • 1 tbsp. lemon juice
  • 1 tbsp. chopped fresh dill
  • 2 cups steamed scallops
  • 1 cup finely chopped celery
  • 1/4 cup chopped green onion
  • 1 tbsp. Italian salad dressing
  • 6 oz. cooked large pasta shells
DIRECTIONS
  1. Combine cottage cheese, lemon juice and dill in a blender and pulse until smooth. Pour cheese mixture into a bowl then add scallops, celery and onion.
  2. Mix. In a separate bowl, mix drained pasta and Italian dressing. Spoon salad mixture into shells.
