Savory Crepe

- 1 whole egg
- 150 g egg whites
- 5 g gluten free pancake mix
- 25 g savory sauce (see recipe)
- 50 g ratatouille (see recipe)
- Additional herbs on hand (rosemary, thyme chives etc)
- salt and pepper to taste
DIRECTIONS
- blend whole egg and egg whites well with pancake mix. Pour into a 12-14 inch skillet. cook on med high for 1 min. Add ratatouille, savory sauce and top with desired herbs, salt and pepper.
- cook for approx. 4 more min. Fold over edges into thirds, plate and enjoy!
