Saltine Toffee Cookies

  • 4 ounces saltines (one sleeve)
  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • 2 cups semisweet chocolate chips
  • 3/4 cup chopped pecans
  1. Preheat oven to 400 degrees F
  2. Line cookie sheet with saltine crackers in a single layer.
  3. In a saucepan, combine the sugar and butter. Bring to a boil.
  4. Boil for 3 minutes. Immediately pour over saltines and spread to cover crackers completely.
  5. Bake in the preheated oven for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 to 6 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.
For a while, every pot-luck and party had a plate or tin of these delicious treats. I got the recipe from my sister, Rita, but have seen it on several web sites. It's easy to make and requires few ingredients. Walnuts or almonds can be substituted for the pecans.
