Salted Nut Roll Bars

- Crust
- 1 1/2 cups flour
- 2/3 cup brown sugar, packed
- 1/2 tsp baking powder
- 1/4 tsp soda
- 1/2 cup butter, softened
- 1 tsp vanilla
- 2 eggs
- Topping
- 3 to 4 cups miniature marshmallows
- 2/3 cup white corn syrup
- 1/4 cup butter (1/2 stick)
- 2 tsp vanilla
- 12 oz bag of peanut butter chips (2 cups)
- 2 cups Rice Krispies
- 2 cups salted and blanched or dry roasted peanuts
DIRECTIONS
- Preheat oven t 350 degrees.
- Combine all crust ingredients. Spread into a 9 X 13 inch cake pan.
- Bake 15 minutes. Remove from oven.
- Cover with marshmallows.
- Return pan to oven until marshmallows are puffy. Remove from oven and cool.
- In saucepan, combine syrup, butter, vanilla, and chips. Heat until melted.
- Add cereal and peanuts; mix to combine.
- Spread over the cooled crust.
- This cuts best if it is chilled, but does not require refrigeration after it is set.
