Salmon Patties (and my variations) Barb Fankhauser's Style
INGREDIENTS
  • 3 cans Pink Salmon
  • 3-4 eggs (depends on egg size)
  • 1 Stalk Celery minced
  • 1 yellow onions minced
  • Garlic powder
  • Parsley flakes
  • Cilantro flakes
  • Salt
  • Seasoned Bread Crumbs (not Italian seasoned)
  • Oil for frying (or for coating pan for Salmon Loaf)
DIRECTIONS
  1. Open and drain Salmon Put in bowl remove dark skin (feed skin to pets if you choose)(leave the soft bones they are good and give you some minerals)
  2. Break up Salmon w/ a fork
  3. Add eggs mix well
  4. Add celery and onions mix well
  5. Add 2 shakes garlic powder
  6. Add 3 shakes salt
  7. Add 3 shakes Parsley flakes
  8. Add 3 Shakes Cilantro flakes mix well
  9. Add bread crumbs a lil at a time until you can form it into a patty or a ball
  10. Fry patties or balls in oil (if making Salmon Loaf put a generous amount of oil in the baking pan you use make sure to coat sides too. I use glass baking pans)
  11. *NOTE This is a thick mixture and best mixed by hand. I use zip-lock type freezer bags for gloves :P Hey it works LOL
  12. Also: Amounts of celery, onions, garlic powder, parsley, salt, and cilantro can be adjusted to you and your families tastes
RECIPE BACKSTORY
When I was growing up I remember telling my mother to make these more often! When my kids were under 5 I made these in lil meatballs and when they were older I used this recipe for Salmon Loaf.
