Sage Pork Roast
INGREDIENTS
- 1 pork loin roast
- 2 large cloves garlic, cut into slivers
- 1 tbsp. oil
- 1 1/2 tsp. sage
- 1 1/2 tsp. thyme
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup white wine or chicken broth
DIRECTIONS
- Preheat oven to 325 degrees.
- Cut about 12 small slits randomly around the meat.
- Insert the garlic slivers into the slits.
- Rub the surface of the meat with the oil. Sprinkle with the sage, thyme, salt and pepper. Rub into the meat.
- Place meat on a rack in a roasting pan.
- Bake uncovered for 1 3/4 to 2 hours.
- When done remove from oven and tent with foil for 15 minutes before slicing.
- Meanwhile pour wine or broth into roast pan, stirring to loosen the browned bits.
- Cook over medium heat until mixture starts to bubble.
- Cook until slightly thickened.
- Drizzle over sliced meat.
