Sabzi Polo [Herb rice]

- 3 cups of water
- 2 cups of Basmati rice
- 2 tablespoons of vegetable oil
- a small bunch of fresh dill, chopped
- a smal bunch of cilantro, chopped
- a small bunch of parsley, chopped
- 2 cups of horse beans
- ground turmeric to taste
- ground cinnamon to taste
- 1 teaspoon of salt
- 1 teaspoon of pepper
DIRECTIONS
- 1 Bring water to the boil in a big pot, stir the rice into the boiling water, reduce the heat and simmer for 5 minutes.
- 2 Drain the rice, stir in the oil and half a cup of water
- 3 Add the herbs, horse beans, turmeric, cinnamon, salt and pepper
- 4 Cover and simmer on the lowest heat for 40 to 45 minutes
- NB Don't be surprised to find some crispy rice on the bottom of the pot after cooking. The crispy rice tastes very good too.
