SMOTHERED DANDELION GREENS
INGREDIENTS
  • 2 lbs. fresh dandelion greens
  • 3 tablespoon olive oil
  • 1 clove garlic, chopped
  • Salt & Pepper
  • optional: Red pepper flakes while sauteing garlic
DIRECTIONS
  1. Discard wilted dandelion leaves.
  2. Wash greens several times in cold water and cut off roots (if they are there).
  3. Saute garlic in hot oil for 1 minutes.
  4. Add washed greens and seasonings.
  5. Cover pan tightly and cook slowly 10 to 12 minutes until tender.
  6. If greens become too dry, add 2 tablespoon water.
  7. Stir occasionally.
  8. Serve hot as vegetable.
