Ring Around Cookies
  • Cooking Time: 10-12
  • 1 cup soft shortening - part butter
  • 1 cup sifted powdered sugar
  • 2 tsp. vanilla extract
  • 1 1/4 cups sifted flour
  • 1/2 tsp. salt
  • 1 cup rolled oats
  • Shredded coconut or finely chopped nuts
  1. Mix soft shortening (part butter), sifted powdered sugar and vanilla extract thoroughly.
  2. Mix in sifted flour, salt and rolled oats.
  3. Shape into 2 rolls 1 1/2 inches in diameter. Coat by rolling in shredded coconut or finely chopped nuts. Wrap in waxed paper and chill overnight. Cut into 1/4 inch slices and bake on an ungreased cookie sheet.
  4. 375 degrees F for 10 to 12 mins. or until lightly browned.
I got this recipe when I was in school many, many years ago. I guess that makes it a real keeper. ;-) Needs to chill overnight.
