Reception Salad

INGREDIENTS
  • 1 can (8-3/4 oz.) crushed pineapple
  • 1 package (3 oz.) lemon flavor gelatin
  • 1 cup boiling water
  • 1 package (3 oz.) cream cheese, softened
  • 1/2 cup finely chopped celery
  • 1 pimiento, chopped fine
  • 1/2 cup chopped walnuts
  • 1 cup heavy whipping cream, whipped
  • dash of salt
DIRECTIONS
  1. Drain pineapple and reserve syrup. Dissolve gelatin in boiling water. Measure syrup and add water to make 1 cup. Add to gelatin mixture. Blend cheese, pineapple, celery, pimiento and nuts. Add to gelatin with salt. Fold in whipped cream. Turn into a 1 quart mold. Chill.
