Quinoa Chili
INGREDIENTS

  • 1 cup uncooked quinoa
  • 1 Tablespoon olive oil
  • 3 cloves garlic
  • 1 yellow onion
  • 1 14.5-ounce can diced tomatoes
  • 1 6-ounce can tomato paste
  • 1 4-ounce can diced green chiles
  • 1 1/2 cups water
  • 2 cups corn
  • 1/2 Tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Pepper to taste
  • 1 15-ounce can kidney beans
  • 1 15-ounce can black beans
  • 1 teaspoon lime juice
  • 1/4 cup cheddar cheese
  • 1 avocado
DIRECTIONS
  1. Cook the quinoa in a medium saucepan according to the package instructions.
  2. Meanwhile, in a large pot, heat the olive oil and add the garlic and onion. Cook until translucent, about 2-3 minutes.
  3. Stir in the diced tomatoes, tomato paste, green chiles, water, corn, and spices.
  4. Add the kidney beans, black beans, and quinoa when ready. Remove from heat once the chili is warm throughout. Then top with lime juice, cheese, and avocado to serve.
