Quick Chicken Nuggets
  • 1/2 c. grated Parmesan cheese
  • 1 c. Italian flavored bread crumbs (or regular bread crumbs and add Italian Seasoning to taste).
  • 1/4 c shredded cheddar cheese (I use a bit more)
  • 2 t. basil
  • 1 stick butter, melted (I use reduced fat margarine and don't taste a difference but cuts a few calories).
  • 1 pkg boneless chicken breasts, cut into bite size pieces.
  1. Mix parmesan, cheddar, bread crumbs, and basil together in a 9x9 pan.
  2. Melt butter in a separate dish.
  3. Dip chicken pieces into butter then put in bread crumb mixture to coat a few at a time.
  4. Bake on a foil lined cookie sheet (easy clean-up!) that has been sprayed with cooking spray at 400 degrees for 10 minutes or until chicken is done.
I found this recipe and liked it immediately because my husband can assist me (which he likes to do) and it was cheap (which was also nice since we were on the poor side!) To this day, we have fond memories whenever we make this recipe.
