Quiche aux Fruits de Mar

INGREDIENTS
  • 2 tbsp minced green onion
  • 1 large clove garlic, minced
  • 1/2 cup of finely sliced mushrooms
  • 2 tbsp sherry
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 cup cream
  • 1 tbsp tomato paste
  • 3 large eggs, beaten
  • 1 tablespoon fresh parsley
  • 1.5 cups cooked crab/lobster/shrimp mix
  • .5 cup Swiss cheese
  • salt and pepper
DIRECTIONS
  1. Spray nine inch spring form pan with cooking spray.
  2. Preheat oven to 375 degrees.
  3. Mix first 6 ingredients and saute until tender. Remove from heat.
  4. In a mixing bowl combine eggs, cream, tomato paste, and parsley-whisk until well blended.
  5. Add in sauted items and meat- combine well.
  6. Pour mixture into partially cooked pastry shell and top with cheese.
  7. Bake in preheated oven for 25-30 minutes- until quiche has puffed up and is brown.
  8. Let cool 10 minutes before cutting.
