Pumpkin Zucchini Bread

INGREDIENTS
- 3 eggs, beaten
- 2 cups granulated sugar
- 1 (15 oz) can pumpkin puree
- 1 cup applesauce
- 1 tablespoon vanilla extract
- 3 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup zucchini, grated
- 1 cup walnuts, chopped
DIRECTIONS
- Preheat oven to 350 degrees. Grease and flour two 9"x5"x3" loaf pans.
- In a large mixing bowl beat eggs and sugar. Beat in pumpkin, applesauce and vanilla extract.
- In a medium mixing bowl combine flour, baking soda, baking powder, salt, cinnamon, nutmeg and cloves. Gradually add flour mixture to pumpkin mixture until just combined - do not overmix. Fold in zucchini and walnuts. Pour evenly into prepared loaf pans and bake for 50-55 minutes or until a toothpick inserted into center of bread comes out clean.
