Pumpkin Pineapple Cookies

  • 1 cup fresh or canned pumpkin or sweet potatoes
  • 1 small banana, mashed
  • 1/2 cup crushed pineapple, with juice
  • 3/4 cup date sugar
  • 3/4 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 cups quick oats (not instant)
  • 1 cup raisins
  • 1/2 cup chopped walnuts
DIRECTIONS
  1. Combine pumpkin, banana and pineapple.
  2. In a separate bowl, combine rest of ingredients. Stir in pumpkin mixture.
  3. Drop by tablespoonfuls onto cookie sheet and press down slightly.
  4. Bake for 10 minutes at 350 degrees.
  5. Makes 16 cookies.
