Pumpkin Pie Bread Pudding
INGREDIENTS
- Cooking Time: 35
- 1 1/2 cups soy milk
- 1/2 cup firmly packed brown sugar
- 1/3 cup sugar
- 1 tsp. vanilla or vanilla extract
- 1/4 tsp. ground cinnamon
- 3 egg whites
- 1 whole egg
- 1 can pumpkin
- 1 loaf stale French Bread or similar
DIRECTIONS
- Combine first 9 ingredients in a large bowl; stir well. Add bread; toss gently. Let mixture stand 1 hour.
- Spoon mixture into a 10 x 7-inch baking dish coated with non-stick cooking spray.
- Bake at 350 degrees for 35 minutes or until pudding is set.
RECIPE BACKSTORY
I lived in New Orleans for eight years and of course, Bread Pudding is a big deal there. But most of the recipes used fruit and I liked tweaking the classic recipe drastically until I came up with my own versions. Thia version is a twist of the recipe you'd use for Halloween or Thanksgiving and I'd use it on potluck Turkey Day dinners.
