Pumpkin Oatmeal Cookies

  • 4 C. flour
  • 2 C. oatmeal
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/2 C. butter or margarine, softened
  • 2 C. brown sugar
  • 1 C. granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 (16 oz.) can solid pumpkin
  • OPTIONAL:
  • 1 Cup of raisins, chocolate chops or nuts.
DIRECTIONS
  1. PUMPKIN OATMEAL COOKIES
  2. 4 C. flour
  3. 2 C. oatmeal
  4. 2 tsp. baking soda
  5. 2 tsp. cinnamon
  6. 1 tsp. salt
  7. 1 1/2 C. butter or margarine, softened
  8. 2 C. brown sugar
  9. 1 C. granulated sugar
  10. 1 egg
  11. 1 tsp. vanilla
  12. 1 (16 oz.) can solid pumpkin
  13. Preheat oven to 350 degrees.
  14. combine first 5 ingredients, set aside.
  15. Cream butter, gradually add sugars,mix until light and fluffy.
  16. Add egg and vanilla, mix well.
  17. Alternate dry ingredients and pumpkin mixture.
  18. Mix well after each addition.
  19. OPTIONAL: you may add 1 Cup of raisins, chocolate chops or nuts.
  20. Drop by tablespoon onto lightly greased cookie sheet.
  21. Bake for approximately 14 minutes until firm and lightly browned.
